![BANANA MUFFINS ✨ [save post to reference later]
Ingredients:
* 1 1/2 Cups of Mashed Ripe Banana [about 2-3 bananas depending on size]
* 1/3 Cup Melted Coconut Oil * 1/4 Cup Milk [we like Macadamia or Almond Milk for this]
* 1 egg
* 1/4 Cup Unsweetened Applesauce * 1 tsp Vanilla Extract
* 2 Cups Fine Almond Flour
* 1/2 Cup Coconut Sugar or Sugar Free Sweetener [we used Swerve Sugar Replacement]
* 4 tsp Baking Powder
* 1 tsp Cinnamon * 1 tsp Turmeric
* [feel free to add in chopped walnuts or chocolate chips]
Directions:
* Preheat oven to 400 degrees * Spray muffin pan [we drizzled olive oil in the empty cups and spread it using a paper towel]
* Combine wet ingredients in a medium to large size bowl - mix it well
* Slowly add in dry ingredients and mix with spatula. It’s okay if it’s chunky!
* Bake in oven for 5 minutes at 400, then lower oven temperature to 375 and bake for another 20 minutes. * Remove muffins from oven and let them cool down. * Eat and enjoy!!!

![Casey and I just got back from riding our bikes in the neighborhood. While we have always had a pretty active community, tonight seemed different... in a good way. More families going on walks together, a mom teaching her son how to ride a bike, multiple couples holding hands staring into the sunset. Every single person we rode by smiled and/or waved at us. Everyone just seemed way more engaged with each other [but at a safe distance of course]. Casey even made me kiss him in front of a guy running by us [I am NOT very into PDA 😂😂😂]. For a brief moment, the anxiety disappeared and an overwhelming feeling of peace took over. 💗 Hoping you all had some moment of peace today. .
